Shaved Raw Asparagus Salad
- 2 lb. large asparagus
- 1 cup Jimmy’s Parmesan Dressing
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. white wine vinegar
- kosher salt and fresh ground pepper
- Using a vegetable peeler shave asparagus into long thin shavings. Transfer to large bowl.
- Whisk the Jimmy’s Parmesan Dressing and other ingredients, Pour over the shaved asparagus and refrigerate. Serve with slotted spoons to drain excess dressing.
