Sprialized summer squash, spiralized cucmber, cherry tomatoes and Jimmy's Sweet & Sour Dressing

 1/2 cup Jimmy's Sweet & Sour Dressing
 1 Tbsp. Dijon Mustard
 5 cups prepared salad mix
 3 cups spinach salad mix or baby spinach
 2 oranges, peeled and sliced
 2 cups mushrooms, sliced
 1 cup dried cranberries
 1/2 cup red onion, sliced
 1/4 - 1/2 tsp. black pepper, coarsely ground

In a large bowl combine Jimmy's Sweet & Sour Dressing (shake well in jar before using) and mustard. Mix well. Add remaining ingredients. Toss gently to coat well. Serve.
