Smokey Bacon Potato Salad

 2 lbs red potatoes, boiled and cut in to bite-sized pieces (leave skin on)
 1 ¼ cups bacon, fried and crumbled
 2 bunches green onions, sliced
 1 ½ cups cheddar cheese, shredded
 2/3 cup celery, chopped (optional)
 1 tub Jimmy’s Holy Smoke! Dip

Start with clean potatoes. Put them in a large pot, cover with water and bring to a boil. Boil for approx. 12-15 minutes or until potatoes fork tender. Drain and rinse with cold water. Refrigerate to cool them completely. May take up to an hour.

When potatoes are cold, add the remaining ingredients and stir until coated well. Reserve some bacon crumbles and green onions to sprinkle on top. Refrigerate until ready to serve.
