2 lb. large asparagus
1 cup Jimmy’s Parmesan Dressing
2 Tbsp. fresh lemon juice
1 Tbsp. white wine vinegar
kosher salt and fresh ground pepper

Using a vegetable peeler shave asparagus into long thin shavings. Transfer to large bowl.

Whisk the Jimmy’s Parmesan Dressing and other ingredients, Pour over the shaved asparagus and refrigerate. Serve with slotted spoons to drain excess dressing.
