 6 slices Prosciutto
 5 oz. Arugula
 ½ cup cucumber, peeled and chopped
 1 cup cherry tomatoes, sliced
 1/2 bunch green onions, sliced
 2 ripe avocados, diced
 1 cup Jimmy’s Extra Chunky Blue Cheese Dressing

Preheat oven to 375 degrees F. Place prosciutto on a baking tray and cook for 5 to 7 minutes or until it is crisp. Remove from tray, cool and break into medium size pieces.

Combine arugula, cucumber, tomatoes, onions, avocado and Jimmy’s Extra Chunky Blue Cheese Dressing and toss gently to combine. Top salad with crumbled prosciutto. Serve.
