Buffalo Blue Grilled Cheese

 4 slices bread
 1 Tbsp butter
 1/3 cup Jimmy’s Extra Chunky Blue Cheese Dressing
 2 slices provolone cheese
 ½ cup shredded Colby Jack cheese
 1 cup roasted chicken, chopped
 ¼ cup buffalo sauce

Preheat a large fry pan to medium on stove top. In a small microwave safe bowl, mix roasted chicken with buffalo sauce then heat in microwave till hot and set aside. Butter one side of each of the bread slices, then turn them butter side down (use a large cutting board or plate so butter doesn’t get on counter top) and spread Jimmy’s Extra Chunky Dressing on the other side then add a slice of provolone, ¼ cup shredded cheese and ½ cup of the buffalo chicken mixture to each sandwich and spread for even coverage. Top with the other slice of bread that is buttered and blue cheesed on either side and gently lay both sandwiches in fry pan. No need to oil or spray pan. Toast each side until lightly brown. Plate and slice sandwiches in half or fourths. Serve immediately with veggies, chips or fries on the side.
