Ingredients
  1. 1 cup all-purpose flour
  2. 1 Tbsp white sugar
  3. 2 tsp baking powder
  4. ¼ tsp salt
  5. 1 egg, beaten
  6. 1 cup milk
  7. 2 Tbsp vegetable oil
  8. 2 ripe bananas, mashed
  9. 1 cup sliced strawberries
  10. 1 cup blueberries
  11. 1 cup red raspberries
  12. 1 cup pineapple, sliced
  13. 1 cup banana, sliced
  14. 1 cup grapes, sliced
  15. 1 tub Jimmy’s Creamy Fruit Dip
Instructions
  1. To make the tacos: Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides.
  4. While pancakes are still warm cradle them in half and spoon 1-2 tablespoons of Jimmy’s Creamy Fruit Dip on to bottom, then a small amount of each fruit to the tacos. Serve immediately.
