1 1/4 cups Jimmy’s Cole Slaw Dressing
1 medium head cabbage, shredded or chopped
1/2 medium head cauliflower, chopped
8 strips bacon, cooked and crumbled
2 cups frozen green peas, thawed
2 cups fresh mushrooms, sliced
1/2 cup shredded colby jack Cheese
2 medium tomatoes, cut into wedges

In a large glass bowl, layer cabbage, cauliflower, four slices of bacon, peas, mushrooms and onions. Top with cheese, remaining bacon and dressing. Cover and refrigerate overnight. Top with tomatoes before serving. Garnish with crumbled bacon if desired.
